Here at Stonehouse Smokery HQ, we are extremely proud and excited to be able to offer you the chance to taste our wonderful free range produce regardless of where you live in the country. We offer a wide range of ethically reared and sourced Cumbrian charcuterie. Including our twists on the classics such as Chorizo, Pancetta, Lomo and Coppa, as well as our unique cures using locally foraged seasonal ingredients.

Last year we decided to take the plunge & get ready for some serious criticism. We entered 10 of our products into the Great Taste Awards 2022. To our delight, 9 out of the 10 products received awards.

Chilli, Honey & Cider Nduja - 100g approx

Another Cumbrian take on the Calabrian classic. Our Nduja is crammed full of fresh red chillis, not too spicy but bursting with flavour! We also use local wildflower honey from Oor Bees and locally produced cider from our friends at Steilhead Cider to give it a little extra sweetness. Our nduja is delicious on its own or as it’s the season for hearty food, why not try it in a hearty free range chicken & nduja cassoulet.

We received one gold star for our Nduja in the 2022 Great Taste Awards. Here’s what some of the judges had to say.

“It is a deep orange colour, chunky textured with plenty of flecks of fat, which is pleasing, and smells a little smoky - is there some smoked paprika in the mix? On tasting it has a good complex flavour and a lovely saltiness underlining everything. The chilli is well-judged so it adds warmth but does not overpower, allowing the meat to shine. The flavour profile is most enjoyable and we think this would be great simply eaten with some good crusty French bread but could also be folded through pasta.”

“This is an interesting product that has a chunky, spreadable texture. It is a moist and coarse sausage with plenty of chilli in the mix. It delivers a lovely warm flavour and plenty of complexity from the component flavours. This is a hugely promising product, that shows some really pleasing elements.
